I convert to B&W; agterwards, that way I have both versions of the photo.

These days, I use Aperture to convert to black and white.

When I convert my photos I often use the color filter function in PS and I can find the right contrast to the right picture

If you want to get fancy with photoshop, there's a good B&W; conversion method here: Carr Method. Another method I've used is the Hue/Saturation Adjustment Layer method.

I always convert them afterwards. I use a B&W; filter called "Convert to B & W Pro 2.01" from "The Imaging Factory" ( http://www.theimagingfactory.com/ )
