My parents have one of these. I believe it only blooms once a year and only at night, is that correct?

Yes, only once a year, although the blooms can be spread over several nights or weeks. And they don't open until about 10:00 pm. But you can cut a bloom early and bring it into the house. It will open on schedule. I have even put them in the refrigerator overnight to show someone in the morning.
