Cream Cheese Flan

Ingredients:

 

3/4 c. Sugar

1 12-oz can Evaporated milk

1 14-oz can Sweetened condensed milk

1 8-oz Package cream cheese, softened to room temperature

5 Large eggs

1 t. Vanilla

1. Preheat oven to 350 degrees.

 

2.  Heat sugar in a small, heavy-duty saucepan over medium-low heat. Stir constantly, for 3 to 4 minutes or until sugar is dissolved and caramel colored. 

Note: This melted sugar is extremely hot, so be careful!

3.  Quickly pour the melted sugar into bottom of a 2-quart casserole dish, carefully tilting the dish so that the sugar is spread throughout the bottom.

4.  Place evaporated milk, sweetened condensed milk, cream cheese, eggs and vanilla in a blender; cover. 

 5.  Blend until smooth. 

6. Pour mixture into the prepared casserole dish. 

7.  Place casserole in a 13x9-inch baking dish; fill baking dish with warm water to 1-inch depth.  Bake 1 hour and 15-25 minutes or until knife inserted comes out clean. 

8.  Remove flan from hot water.  Cool at room temperature in casserole on wire rack.  Refrigerate for several hours or overnight.

 

 

 

 

9.  Time to clean the mess!

This is my favorite desert since I was a baby (which means, a loooooong time ago). I bought the ingredients a couple weeks ago but was too lazy to make it. Thanks for your encouragement I'm gonna try it today. Hope I succeed.

I think having all the photos might make it look like a long process. However, it's really easy: Melt the sugar in the pot and add to the baking dish. Dump the remaining ingredients into the blender and process till smooth. Pour into the baking dish. Put the baking dish into another pan filled with the warm water. At this point you have only spent 15 minutes total in the kitchen. Bake 1 hour (maybe 70 minutes total). Let cool. Refrigerate; invert in serving platter. Eat!! Let me know how it comes out.

"Invert in serving platter" is the most difficult step... My flans always get broken and wouldn't make good photos.

Just take a sharp knife and run along the edge of the dish a couple of times. It will come out. :)

Sorry, haven't make mine yet... And the only reason is: I had forgotten to bring my cam with me when I left my office! The taste wouldn't be the same without some pics to show you.

This looks great! Do you use a candy thermometer for the sugar melting process or just eye it? I'm nervous to try without getting one.

Jacobmarley, no, I don't use a candy thermometer. Just keep the heat on medium-low heat and keep stirring. As soon as it's completely liquified, pour it into the baking dish and carefully spread along the bottom by tilting the baking dish. No need for a thermometer. :)

I've made this recipe a lot before, (I think my starter-innertube around my middle shows this fact) but when melting sugar, I've found that using powdered sugar melts easier and faster than granulated sugar. Try it out! Hopefully you all have good luck with it like I've had.

Kew, thanks for the suggestion. I try it the next time I make it. I also plan to put in some orange zest and a splace of orange liquor to give it a different flavor. Yum, I should go make it now!
