Fresh anchovies - Open them and remove the fish-bones - Let them lay in a plate , covered with abundant lemon juice, for a couple of hours, till they appear white. Take them away from the lemon juice, make several layers of fishes in a jar with pieces of garlic,parsley and salt. Cover with vergin olive oil. You can eat them also after one hour or keep them in the fridge for 3-4 days.
