Zucchini Soup Recipe

1 Tablespoon Butter

1 Small Onion, Chopped

3 Zucchini, Chopped

2 Cups Chicken Broth

 

1 Small Can Chopped Roasted Green Chiles

 

1 Cup Whole Kernel Corn

Melt butter and Add chopped onion to sauce pan.  Stir and cook till transparent.  Add Chicken broth, Zucchini, Corn, Green Chiles, Salt & Pepper to taste.

Heat to boiling, reduce heat, cover and cook till tender. 

 

Stir in 1 Cup Milk and 2 oz of Monterey Jack Cheese until hot.

 

 

Serve and Enjoy!

Looks very good ! ! ! I guess the butter could be replaced with margarine which would make it a littel more diet wise.

Thanks for the recipe; a little too fat for me, too. I think it could be good enough without milk and cheese at the end. Ciao

Ladies, Try Olive Oil and Fat Free Milk and 2% fat cheese for a lighter soup. Everything comes fat free these days. I hope you will try it. Quick and Easy.
