coconut chicken noodle

The official name is Ohn no khau swe (literary means coconut milk noodle). It's a Burmese cuisine of spicy chicken and wheat noodles in a coconut milk broth.

 

Mom makes the best coconut chicken noodle in the world. I tried to document the whole process and here's how she cooks it...

 

There are three main things to prepare:

1. the coconut milk chicken broth

2. the spicy chicken (as one of the main side dishes)

3. noodles, and other side dishes (including hard boiled eggs, red onions, parsley, etc.

 
boil water, add yellow peas powder/paste into it, bring it to boil
 
chop up a whole chicken, remove skins, leave the chicken breasts for later use.
 
the rest of the chicken is used to prepare the broth
 
chop up some garlics and fry it
 
make sure its not burnt
 
add some turmeric powder
 
add some chili powder
 
put the rest of the chicken in
 
stir fry
 
add some fish sauce
 
transfer the stir fly chicken into the yellow peas soup
 
add more water to the yellow pea water
 
add some more water and let it boil
 
prepare the spicy chicken while waiting for the broth to boil
 
get another pack of chicken breasts, remove skin, chop it up.
 
chop up the onions
 
put them all into a pot
 
add some oil, chili sauce, turmeric powder, and fish sauce
 
mix them all up and cook with low heat.
 
now, start to prepare other side dishes.
 
boil some eggs
 
slide/cut them up
 
red onions
 
cut into thin slides
 
parsley
 
prepare some lemons too
 
now back to the broth.. open up 2 small cans of coconut milk
 
put the coconut milk into the broth
 
let it boil
 
add some rice flour, it'll thicken the broth
 
keep boiling
 
now the broth is ready
 
fried garlics/shallots
 
chili powder
 
now put some noodles into a plate, add the soup, the spicy chicken, and all the other side dishes that u like. squeeze in some lemon juice. it's ready to serve!

yummeeeee! I have an Indonesian recipe close to this one, it's called "soto ayam" (but I won't take pics when I prepare it- I'm a messy and lousy cook!! lol) your photos are sharp, colorful, u should start a cookbook! ;)

Pammie: i don't think u can buy the pea soup... mom always prepared that it herself.. it took abt an hour or more to cook the peas i think ...
