A few days ago Eduardo said he wanted buko pie, so late last night, on my way home from the town of Bagabag (about an hour away from where I live), I dropped by my favorite buko pie makers, G&B.
 
I got you three pies, see?
 
I took one pie with me to work this morning, so i could take pictures of it.

I took some shots of it looking like this, but something seemed to be missing....
 
Aha! There... now you can see the Buko in the pie

Okay this is where the problem started....
 
I know I shouldn't have done this, but I couldn't help it! It smelled soooo good!
 
Now the remaining three slices look kinda lonely....
 
Oh what the heck... there are two more pies back home for you, Edu! And you can have as many as you want when you visit :)

Buko Pie Ingredients:

Crust:

2 cups all-purpose flour
1 tsp. salt
2/3 cup shortening

1 piece eggyolk
1 tsp. vinegar
1/4 cup ice water
Filling:

4 cups coconut meat
1 cup coconut water
1 300 ml. can Sweetened Condensed Milk
2/3 cup cornstarch
Buko Pie Cooking Instructions:

Blend flour and salt in a bowl. Cut in shortening using two knives or a pastry cutter.


Combine yolk, vinegar and water; slowly add the liquid to the flour mixing until dough can be handled.

Divide dough into 2 parts with one part slightly bigger than the other. Roll bigger dough to about 2 inches larger than a 16-inch pie plate.


Fit dough into a pie plate, letting sides hang.


Roll out remaining dough for the crust.


Set aside.

Combine filling ingredients in a thick saucepan.


Cook stirring constantly until thickened. Cool then pour into prepared crust.


Cover with top crust; flute or crimp edges together to seal.


Bake for 1 hr. at 425 degrees F.

That's not fair, MYLES! I have been dreaming of buko pie since I first heard of it, years ago. My Pinoy friend Jigs Javier sent me the recipe (that I never tired, because my cooking skills are nonexistent) and since then I have been wonderfing how it would taste. I hope the two remaining boxes will be still intact when I arrive, next year (and the one you devoured will be replaced, obviously!). Salamat, kaibigan!

MIKE: You live relatively closer to me than Myles, so I think it would be very kind of you to try this recipe and send me a small piece of buko pie (small piece = 3 extra-large boxes). I know you wouldn't disappoint me, would you?? :-)

MIKE: Thank you for the recipe! Like Eduardo, I have zero cooking skills, and that explains why I don't mind driving sixty kilometers just to satisfy my craving for buko pie. But I'll keep your recipe anyway, just in case :)

BEL: I haven't had Alcala Milk Candy in a while! But I'm going to Tuguegarao tomorrow, maybe I'll get some :)

EDUARDO: Like I said, you can have as many pies as you want when you visit :) Sorry this tabblo left you drooling, haha!

Myles, great this tabblo. I do not know this cake that looks like pizza, calzone with, I know there ... seems to be good. It is a cuisine in its many faces. Viva!

I tried my first buko pie 2000 in Laguna / Philippines and it was so yummy.
my favourite one is the one of Collettes, mmmhhhhh.

but I discovered my macho genes and immediately sent my wife to the kitchen to bake buko pie for me ... ;-)))))
honestly I also apply for membership in the club of nonexisting baking skills ... ;-)
but i became a very talented cake tester ... I`m so excited to try the one of my wife :-)))

Eduardo, when you fly to the Philippines you could make a stopover in England and Germany to try the european versions of Mike and my wife Ana :-)
