Instead of chicken I had turkey cutlets in the fridge so it's turkey parm tonight! You'll need the following for this recipie: 3-4 Turkey or chicken cutlets 1 Jar of pasta sauce (or make own if have time) 8oz can tomatoe sauce olive oil for frying and a little for the pasta 1-2 eggs bread crumbs parm cheese mozzerella cheese spaghetti

Place meat in a ziplock and pound thin |

2 eggs - dip each cutlet |

Coat w/bread crumbs and parm cheese mixture throughly |

There are a variety of ways to make this dish. This is just one easy way hubby and I do it - sort of semi homeade, I guess. When I have time I make my own sauce instead of the jar type. However the jar sauces are pretty decent if you add a little extra tom. sauce and your own spices.

Fry in olive oil on med heat till lightly browned |

Be sure to saute on med so you don't burn it! |

Simmer the sauce while the turkey is browning |

My secret - shhh - I simmer the cutlets in the sauce for about 20-30 min = tender! |

While the cutlets are simmering in the sauce, boil the spaghetti. When the spaghetti is nearly done remove the cutlets from the sauce & top w/mozzerella cheese (put in a shallow pan or on a cookie sheet lined w/foil) and run them under the broiler till cheese melts. Plate your spaghetti, add yourself a little sauce, & then place your cutlet on top! Dinner's ready!
