Ingredients
2 Cups Cooked Shredded Chicken 1C half & half or heavy cream 2C shredded Monterey Jack Cheese 1 brick of softened cream cheese Green chile sauce or enchilada sauce - 2 cans or 1 large jar 1/4 of a small red onion fresh cilantro - enough for @ 1-2 Tbs 1 pkg soft flour tortillas |

Directions: Preheat oven to 375 F Blend softened cream cheese and half and half w/mixer till smooth and creamy Add 1 cup of the shredded cheese and all of the shredded chicken & blend till incorporated Add the diced onion and the chopped cilantro and a couple of dashes of salt and pepper and blend till combined. Take 1 can of the chile sauce and heat in a med bowl in microwave for @ 30-40 sec - enough just to warm the sauce Take tortilla and dip each side into the chile sauce then set flat (on a cutting board or wax paper) and spoon filling to one side of the tortilla. Roll up the tortilla placing seam side down into a baking dish (spray dish w/cooking spray) Once done rolling, pour one can over the top of the enchiladas and sprinkle the other cup of cheese over them. Bake @ 30-45 min or till bubbly and lightly browned. Enjoy!!!!!!! :-)
